This may feel like a challenge from the comfort of your bed but it is well worth it for a quiet Christmas morning ski.

Spiced Orange and Almond Cake

A delicious family favourite that can easily be prepared at home.

Ingredients:

2 large oranges (blood orange works best, but normal would do too!) 

6 eggs (room temperature) 

250g ground almonds 

250g caster sugar 

1tsp baking powder 

1tsp cinnamon 

1/2tsp ground ginger 

1/2tsp ground nutmeg 

A pinch of salt 

Method: 

Place the oranges in a pot and cover with cold water. Bring to the boil and simmer for 20 minutes then drain the water and repeat the process one more time.

Once done, allow to cool and blend to a smooth puree. 

Set your oven to 170C, grease and line a 23cm cake tin

Mix all (except sugar) dry ingredients in a large bowl 

Whisk the eggs with sugar until light and fluffy on high speed for a few minutes. 

Then fold the egg mixture into the orange puree.

Add the dry ingredients to the eggs and orange mixture. Be gentle. 

Transfer to a baking tin and bake for 50-60 minutes until the skewer inserted comes out clean. 

Allow to cool and then decorate with icing sugar and candied orange peel.
