Tender Easter Roast Lamb

This tasty traditional favourite is sure to be an Easter showstopper when done right. Serve with mint sauce, rosemary roasties, sweet dijon-glazed carrots, grilled Mediterranean veg or lemony spring greens.

“Remove the lamb from the refrigerator and allow it to sit at room temperature for at least 45 minutes, which will allow for more even cooking and help prevent the lamb from drying out. 

When roasting, add lamb stock to water to cover the bottom of the roasting tray, along with aromatics such as rosemary, thyme and garlic. This will all add flavour and keep the lamb moist. The leftover juices can then be used to make a delicious rich gravy.

Ensure you allow at least 15 minutes of resting time after cooking, to lock in moisture and flavour, and to make for easier carving.”

Patrick’s Gooey Chocolate Fondant

RECIPE: 2 eggs; 70g sugar; 110g butter; 110g dark chocolate; 60g flour; Lindt chocolate truffles.

  1. Whisk eggs and sugar until well incorporated.
  2. In a separate bowl add butter and chocolate, and melt over a pan of simmering water.
  3. Pour the melted butter and chocolate mixture over the eggs and whisk.
  4. Sift in flour and mix until thick and glossy. Place into a piping bag.
  5. Grease ramekins with butter and cocoa powder.
  6. Pipe the chocolate mixture halfway and place a chocolate truffle in the centre.
  7. Top up with more of the mixture so that it is three-quarters full.
  8. Bake at 200°C for 12 minutes.
  9. Quickly and carefully flip onto a plate and dust with icing sugar.
  10. Serve with ice cream and berries – or really any topping you like!
